Thanksgiving in October!!!
Being on a ship for 50 days will have it's challenges. Most people think having someone cook FOR you will be great. There will be 4 meals a day on the HEALY – breakfast, lunch, dinner and mid-rats (midnight rations). Sounds great to most, but I am a little hesitant about that. I enjoy spending time in the kitchen!
Who would have thought...Thanksgiving in October! Thanksgiving is one of my favorite holidays! I LOVE to cook and I LOVE to eat. For as long as I can remember, I have been in the kitchen. As a child, I would beg my mom to be able to do the dishes and cook! I learned to prepare Thanksgiving Dinner from my Grandma Burden – she was the BEST cook ever! I am so thankful I learned from the best!
So, when the dates for the Winter Sampling expedition were finalized, I recognized right away that I would be away from home on Thanksgiving. This past Sunday, my family celebrated our Thanksgiving early. I have so much to be thankful for...my amazing boyfriend Brian and our blended families, the health and job security of those around me, wonderful students and the support that I am receiving from everyone for my PolarTREC expedition. I am truly blessed!
Enjoying a family Thanksgiving dinner in October!Our traditional Thanksgiving dinner included a turkey, mashed potatoes and gravy, dressing, green bean casserole, summer squash casserole (made from squash from our garden), deviled eggs, cherry jello and pumpkin pie. YUMMY! Dr. Ashjian told me that we would have a Thanksgiving feast aboard the HEALY as well! You can't have too much turkey!!!
