To cool those huge engines, you need LOTS of water. The peep at work think it is a closed loop, with a radiator, fan... I think it is an open system drawing from, and dumping into, the ocean. I think the extra heat generated from the engines helps keep you and the crew warm. Am I correct?

GREAT question...it is a closed system. Saltwater is pumped into the SeaBay which is a holding area in the center of the ship. Saltwater from the Sea Bay cools Central freshwater. That central freshwater cools lube oil, jacket water and the bearings! I hope you didn't have a bet with the people at work!

Yes, BUT the OCEAN is still the source for the cooling water. It is pumped in, it COOLS the other water which in turn cools the oil, but it is STILL and OPEN system for cooling the engines.
